Good Morning Gentle Readers,
White chocolate isn't really chocolate, it's cocoa butter, milk solids, and sugar. Nestle, who invented white chocolate in the thirties, now markets white chocolate chips that are made from palm oil, sugar, and non-fat milk solids. To be fair, US law requires white chocolate to contain at least 20% cocoa butter by volume, but come on, white chocolate shouldn't contain a dime's worth of palm oil.
You wouldn't want to drink it often, but white hot chocolate is a great holiday treat and easy to prepare.
- one cup of white chocolate
- two cups heavy cream
- one quart of half and half
- one tablespoon of vanilla
Combine all in a suitable saucepan and simmer slowly over low heat, stirring frequently, until the chunks of white chocolate are completely melted. Takes about twenty to thirty minutes. Ladle into mugs and garnish with, well, whipped cream.
